Asparagus Pizza Squares

What child doesn't love pizza and what parent doesn't want their child to eat more vegetables? Here's a solution where everyone wins! In a rush to find something quick and easy to cook for dinner (the story of my life), I came across a similar recipe to this one. I decided to tweak some things to make it my own recipe, and I couldn't be happier with the end result.

I, personally, am a huge asparagus fan, and if you clicked on this recipe then chances are you could be one, too. But for anyone who isn't a fan, you can use almost any vegetable in place of asparagus. Some suggestions would be to try making it with squash, zucchini, broccoli, corn, garlic, or black olives! My recipe also calls for mushroom and crushed pepper. Feel free to swap those ingredients out, too!

My children love this recipe. It is PIZZA, after all! Even though they are still tempted to pull the vegetables off from the top, we have a deal in our house. If I let them get involved and help me make dinner then they need to be willing to put at least two pieces of vegetables on each croissant roll that they eat. It works! And they tend to eat at least 2 rolls, each! The best part is, I get their help in the kitchen AND they eat their vegetables! SCORE!

So, the next time you plan a family movie night, don't order from Little Caesars! Consider making this easy and healthy(ish) recipe, instead.

Ingredients

  • 1 cup Sweet Onion, Chopped
  • 1-2 Garlic Cloves, Minced
  • 3 tbls Butter
  • 1 lb Fresh Asparagus, Trimmed
  • 1/4 tsp Pepper
  • 1 oz Roasted Red Pepper, Chopped
  • 1 cup Sliced Mushrooms
  • 2 8-oz tubes Refrigerated Crescent Dinner Rolls
  • 4 oz Part Skim Mozzarella Cheese, Shredded
  • 4 oz Swiss Cheese, Shredded

  1. Preheat oven at 375*F; In a large skillet, saute onion and garlic in butter over a medium heat, until tender.
  2. Cut asparagus into 1 IN pieces; set them aside.
  3. Add asparagus to skillet & saute until crisp-tender, about another 4-6 mins.
  4. Add mushrooms and pepper and saute for 1-2 mins or until all veggies are tender.
  5. Press the croissant roll dough into an ungreased 15x10-IN baking pan.
  6. Bake for 6-8 mins or until lightly browned.
  7. Top the cooked croissant rolls with your asparagus mixture, then sprinkle the cheeses on top.
  8. Bake another 6-8 minutes or until the cheese is melted.
  9. ENJOY!

NOTE: You may also add marina sauce to the dough before placing your asparagus mixture on top. If you desire to add this step, spread the sauce on before you bake your croissant rolls.

Add your own toppings to give it extra flavor!

  • Eat Together: Everyone needs to eat, so why not do it together? Tip: Turn the TV off and you might actually talk to each other, too!
  • Take Walks Together: It may sound exhausting after a long day of work, but a simple-paced walk is more unwinding and relaxing than it is strenuous. Promote healthy living and fresh air with your family, and don't forget to recap your days to each other during that walk!
  • Get Out Of The House: You don't have to be gone all night, but sometimes getting away from the house is important to do as a family (not just individually). Go for a bike ride, watch the sunset somewhere, explore a local park, or if the sun is already down go have a scavenger hunt in your local Walmart or Target!

The point is to get creative and enjoy your family in the process. It doesn't have to be a lot of work, but it does take time; the most important time that you'll never get back. Thanks for reading my hubs and enjoy your Pizza!
